Baby's breath is one of those strange flowers that make you wonder where the name came from.
As a florist it's quite amusing how often people get the name wrong, I've heard Baby's Tears, Baby Goat, Goat's Tears & many other strange variations!
The botanical name actually means 'lover of chalk' which apparently describes the type of soil the plant grows in.
"The root of the Gypsophila repens is used to make the whipped-cream topping of the Turkish dessert kerebic. Boiling the root over a period of hours produces white bubbles which are collected, mixed with sugar, and mixed until it thickens to a cream."
